紹興酒產於浙江省紹興(古稱會稽,山陰),由於儲存愈久愈香,故又名「老酒」,「黃酒」。紹興為中國最古老的黃酒產地,當地釀酒已有二千四百年歷史,隋唐以後紹興酒成為歷代重要貢品。紹興酒是中國特有的低酒度黃酒,為中國八大名酒之一。其中尤以加飲酒因其質厚,味醇,香氣濃郁稱著于世。把加飯酒裝入雕繪有山水花烏,人物故事的酒壇中,就稱之為花雕酒,花雕酒宜於久藏,越陳越香,酒味釅醇而不變。 紹興酒因具有愈陳愈香的特點,講究古老,一般泥封酒罈五年後開啟為好,泥封時間越長,酒質也就越好,香味也更醇厚馥郁,所謂陳年老酒是也。陳恆慶<<諫書稀庵筆記>>中有載:「紹興酒陳過十年而後開罈,醇如膠,甘如醴,飲至十杯,則醉如泥,而不作酒惡。醒解時,喉潤如酥。」

水質優良為美好酒質的關鍵,慶湖紹興酒釀造用水取自鑒湖,鑒湖水源出於山高嶺峻的會稽山脈,經岩層與砂礫過濾淨化,碧綠清澄,甘洌可口.由於水中含有各種礦物質,有利於微生物的生長,用來釀酒極為適宜。清道光時人梁章鉅<<浪跡續談>>載:「今紹興酒通行海內,可謂酒之正宗。蓋山陰,會稽之間,水最宜酒,易地則不能為良。故他府皆有紹興人,如法制釀,而水既不同,味即遠遜。」 慶湖紹興酒以上等精白糯米,優質小麥為原料,配以鑒湖洌水,經獨特傳統工藝發酵釀製而成,色澤金黃或紅褐,香氣濃郁芬芳,口感鮮美醇厚具有正宗地道風味。以科技大量生產的紹 興酒絕不能與地道傳統工藝釀制的慶湖紹興酒相提並論。 紹興酒屢獲國內外金獎,並被選為國宴用酒以招待國賓。

Nowadays, Shaoxing Chiew is served at the Great Hall of People in Beijing as the Chinese liquor for state banquet and enjoyed by heads of state.
